Rosie's Alcoholic Chocolate Mousse

This is my own version of a chocolate Mousse recipe I made years ago, I always make this as my Christmas desert as it is a favourite with everyone. 




 Ingredients:

  • 5 Free Range Eggs Separated
  • 500 ml Fresh Cream
  • 300 gm Chocolate (Mixture of Milk and Dark)
  • 1 cap full each of Brandy, Cointreau, Kahlua or a bit more 
  • 1 Table spoon Castor Sugar

Method:

  1. In Separate bowls, ensure the beaters are dry and whip the Egg Whites with the Castor Sugar until they are stiff
  2. With the same beaters and whip the Cream, not too stiff
  3. With the same beaters whip the egg yolks
  4. Melt the chocolate over hot water or in a low oven
  5. Cool the chocolate and then add the alcohol and egg yolks and fold
  6. Fold the Chocolate into the Egg Whites and then fold the Egg - chocolate - mixture into the Whipped cream.
  7. Pour into a Glass bowel or seperate Glasses 
  8. Decorate 
  9. Put in the fridge overnight and serve chilled.
